Pepper Chicken

Ingredients: 1 kg Chicken, cut into medium pieces 2 tbsp Pepper corns, crushed 1 cup Onion, finely chopped 1 tbsp Ginger & Garlic, paste 1 tsp Garam masala 1 cup Tomato puree 1 sprig Curry leaves 5 green Chilies -slit 2 tsp lime juice 3 tbsp Oil Salt to taste ½ cup Cilantro, chopped How to Cook: Wash the Chicken and marinate with ginger-garlic paste and ground pepper. Keep aside for 30 minutes . Heat oil in a pan, sauté the onions till brown, add the curry leaves and slit green chilies and toss on high flame, then add the marinated chicken and toss well. Add the tomato puree and required salt and cook on medium heat till a bit dry. When almost dry and chicken is cooked add the lime juice and sprinkle the garam masala. Remove and serve in a dish garnished with Cilantro.

Dildar Punjabi chicken

Ingredients: 1 Boneless or whole chicken 1 Onion, chopped 1 Tomato 2 tsp oil Half inch ginger, paste 4 garlic cloves, paste 1 lemon 1 tsp whole coriander seed 4 green chilies 1 tsp salt 1 tsp red chili powder 1 tsp turmeric powder 1 pinch of gram masala 2 tsp chicken curry masala 1 tsp whole cumin Fresh cilantro How to Cook: Heat oil in a pan. Add coriander, cumin, chopped onion, cook for 2 minutes. Add the ginger and garlic paste and fry. Cook until the oil separates. Add all the spices, mix them well, and add tomato and green chilies. Cook for 5-10 minutes and add one cup of water so the masala doesn't stick. Add fresh lemon juice, cook until the oil separates, then add chicken pieces with 2 cup of water and let it simmer. Cook for 10 min until the chicken is done and the gravy is not too watery. Pour cilantro and serve.

KooKoo-Yeh Chicken

Ingredients: 600 gms chicken, cut into pieces 4 large eggs 4 medium onions, sliced 1-2 tsp lime juice ½ tsp saffron 1 tsp baking soda Oil Salt to taste Black pepper, crushed How to Cook: Fry onions in a pan until golden brown Add chicken pieces and fry on both sides until color changes Add salt, black pepper and one glass of hot water. Cook in medium heat for 15-20 minutes. Allow chicken to cool down. Remove bones and cut the meat into small pieces. Dissolve saffron in 2-3 spoons of hot water and baking soda in 2-3 spoons of cold water. Add salt and black pepper to eggs and mix well. Add saffron, baking soda, lime juice, chicken (with juice) and onions to eggs and mix well. Heat oil in a pan. Pour the chicken mix, flatten the surface with a spoon. Fry over medium heat for 5-10 minutes. Cut into 8 pieces, turn over all the pieces and fry for another 5-10 minutes.

Chicken Bhuna 1

Ingredients: 1 kg Chicken, washed and cut into pieces 150 gm Curd   4 big Onions 5-6 peeled Garlic   10-20gm Ginger 2 tsp Turmeric powder 3 tsp Chili powder 2 tbsp Vegetable or mustard oil   Salt to taste How to Cook: Take the chicken in bowl and then add the curd, 1 big tablespoon of ginger garlic paste, 2 tea spoons of chili powder , 2 tablespoon of onion juice (chop one onion and grind it in a mixer) and salt . Keep it aside for 30 mins. Heat the oil in a pan, sauté the chopped onions, and garlic till they become golden brown. Keep aside one-fourth of the onions for garnishing later. Put in the rest of garlic – ginger paste into the sautéed onion and ginger, and just fry for a minute or so. Add the marinated chicken to the pan and pour 2 cups of water. Cook for few minutes covered. Check after 5-6 mins whether the chicken is done. Turn off the stove. Serve the cooked chicken in a bowl and garnish it with the fried onions. Enjoy with rice o...

Achari Chicken 1

Ingredients: 1 Chicken, cut into small pieces 8 whole dry red chilies 1 tsp Mustard seeds ½ tsp Fenugreek seeds  ½ tsp Cumin seeds 1 tsp Fennel seeds 1 tsp black cumin 1 tsp carom seeds 2- 3 Bay leaves Mustard oil, as needed  4 medium Onions, chopped 2 inch Ginger piece, chopped 15-20 cloves Garlic, chopped 1 tsp Turmeric powder 1 tsp Red chili powder 4 medium Tomatoes, chopped 1 tbsp Lemon juice Fresh coriander leaves, chopped 3 – 4 tbsp of pickle oil Salt to taste How to Cook: Heat oil in a pan and add all the seeds for tempering. Let the seeds splutter a bit, add bay leaves and whole red chilies. Add onion, garlic, ginger and tomatoes. Add turmeric powder, red chili powder and salt. Chicken Pasanda

Ingredients: 1 kg Chicken cut into pieces 5 onions 4 potatoes 2 tsp chili powder 1 tsp Turmeric powder 2 tsp Ginger-Garlic paste 4-5 garlic cloves, peeled 2 tsp dried fennel leaves 1 tsp Salt 2 medium Tomatoes, finely chopped 4 tbsp mustard oil How to Cook: Combine chicken in a pan with 2 onion cut into halves, tomatoes, 1 tsp ginger-garlic paste and some water. Cook in a medium heat until the chicken is almost done. Take chicken and onions in another pan and keep stock in other pan. Heat mustard oil in a pan and add diced potatoes to fry. Keep the potatoes aside when those become golden brown. Add sliced onions in the oil and fry for 2 minutes. Add ginger-garlic paste, garlic cloves and fry for another one minute. Add boiled chicken and onions. Add stock along with turmeric and chili powder. Cook 6-7 minutes covering the pan. Add fried potatoes. Add stock or water if needed. Chicken with Poppy seeds

Ingredients: 2 Chickens, cut into 20-22 pieces and washed 250 gms yoghurt 250 gms onion, grated 2 tsp cumin powder 1 tbsp Ginger paste 1 tsp Garlic paste 2 tbsp poppy seed, paste 1 tbsp chili powder 1 tsp fennel powder ½ tsp mace powder 50 gms almonds, paste 50 gms raisins 2 tbsp Salt 120 ml ghee How to Cook: Combine chicken with all the spices Cook in a very low heat for 1 hour Add water if needed. Simmer until the chicken nicely coated with oil/ghee and spices with no moisture. Add chopped almonds before serving with polao or rice
