KooKoo-Yeh Chicken


Ingredients:

600 gms chicken, cut into pieces
4 large eggs
4 medium onions, sliced
1-2 tsp lime juice
½ tsp saffron
1 tsp baking soda
Oil
Salt to taste
Black pepper, crushed

How to Cook:
  1. Fry onions in a pan until golden brown
  2. Add chicken pieces and fry on both sides until color changes
  3. Add salt, black pepper and one glass of hot water. Cook in medium heat for 15-20 minutes.
  4. Allow chicken to cool down. Remove bones and cut the meat into small pieces.
  5. Dissolve saffron in 2-3 spoons of hot water and baking soda in 2-3 spoons of cold water.
  6. Add salt and black pepper to eggs and mix well.
  7. Add saffron, baking soda, lime juice, chicken (with juice) and onions to eggs and mix well.
  8. Heat oil in a pan.
  9. Pour the chicken mix, flatten the surface with a spoon. Fry over medium heat for 5-10 minutes.
  10. Cut into 8 pieces, turn over all the pieces and fry for another 5-10 minutes.

Cook for 10 min until the chicken is done and the gravy is not too watery. Pour cilantro and serve.

Multani Chicken Curry

Ingredients: 1½ Kg Chicken (cut into 8 Pieces) 1 cup Onions, fried to brown 2 Tomatoes, chopped 2-3 tbsp Tomato ketchup 1 tsp Ginger, paste 1 tsp Garlic, paste 1½ tsp Coriander powder 1 tbsp Lemon juice 1½ tsp Chili Powder 1 tsp Curry Powder 1 tsp Cumin Powder 1 tsp salt ¼ bunch Coriander leaves, chopped ½ cup Oil or ghee How to Cook: Heat ghee or oil in a pan. Fry onions till brown. Add ginger-garlic paste with little water and stir constantly. Add all other ingredients and tomatoes. Stir well till oil separates. Add chicken and fry well in the masala. Add 1 cup of water, cover and cook on slow fire for 25-30 minutes. When the chicken is tender and dry add tomato ketchup and lemon juice. In another pan heat some oil, stir in ¼ tsp red chili powder and pour over the chicken. Garnish with coriander leaves. Serve hot with Naan.

Lahori Chicken Karhai

Ingredients: 1 kg chicken, cut into small pieces 4 tbsp clarified butter or ghee 2 tbsp oil 1 tbsp ginger- garlic paste ½ cup yogurt 4 tomatoes, finely chopped ½ black pepper, freshly ground ½ tsp cumin powder ½ tsp coriander powder ½ tsp red chili powder Salt according to taste For Garnishing: 2 tbsp sliced ginger 4 green chilies, thinly sliced 2 tbsp coriander leaves, chopped Few lemon wedges How to Cook: Heat oil in a pan. Add clarified butter and ginger-garlic paste. Stir fry for 2 minute then add chicken. Cook and keep stirring for 5 minutes. Add all spices, red chili & coriander powder, cumin and salt. Cook for 2 minutes then add little water. Cover with the lid and cook 10 minutes on medium heat. Add chopped tomatoes, black pepper and yogurt.
